Assemble all ingredients. Chop vegetables and set aside. 2. Heat oil in a large dutch oven or stock pot. Saute eggplant, onions, peppers and garlic until the onion becomes transparent and eggplant is lightly browned. 3. Stir in all remaining ingredients and bring to a boil.
